The Tudor Pass re-opens its doors today (Wednesday July 16, 2025) at Great Fosters under the dynamic leadership of chef Stefano Di Giosia, marking the beginning of a new culinary era for the celebrated Surrey restaurant.

A rising star to those in-the-know, Stefano brings with him a wealth of experience from some of the most pioneering kitchens in the world.

Defining modern British gastronomy 

Having spent several years at Heston Blumenthal’s legendary The Fat Duck, Stefano played a key role in the development kitchen, helping to craft the boundary-pushing creations that have defined modern British gastronomy.

Most recently, Stefano has been part of the exceptional team at KOL in London’s Marylebone — one of only two British restaurants named in the prestigious World’s 50 Best Restaurants list.
